Dave normally uses 52100 carbon steel (non-stainless) or CPM154 powdered stainless. Both offer excellent edge retention and fine grain structure for easier sharpening.
Japanese chef knives are brittle and are designed for cutting soft tissue foods. High Carbon steel chef knives can rust if not kept dry.
