A scimitar (or cimiter) is a long butcher knife with a curved blade and upturned tip. This sharp and durable blade is used for breaking down large portions of meat and removing large sections of meat from the bone. Use the long blade to remove sinew off meat, trim the fat cap, or slice thin slices of meat in one fluid motion.
