Handmade by our knifemaker Ryan Swanson, this chef knife was designed to be the workhorse in your kitchen.

The blade is made of VG10 Japanese high carbon stainless steel with a hammered surface texture. 7.75" edge length, 2" tall from the heel to the spine. Heat-treated in house to ~61 HRC.

The handle is dyed maple with a brass pins.

Japanese chef knives are brittle and are designed for cutting soft tissue foods. High Carbon steel chef knives can rust if not kept dry.
