Handmade by our knifemaker Ryan Swanson, this chef knife was designed to be the workhorse in your kitchen.

The blade is made of AEBL high carbon stainless steel with a hammered surface texture. 8.2" edge length, 2.25" tall from the heel to the spine. Heat-treated in house to ~61 HRC.

The handle is hand-sculpted ironwood scales with a brass pins.

The walnut saya is custom-made for the knife.

Japanese chef knives are brittle and are designed for cutting soft tissue foods. High Carbon steel chef knives can rust if not kept dry.
