Handmade by our knifemaker Ryan Swanson, this chef knife was designed to be the workhorse in your kitchen.

The blade is made of AEBL stainless steel with migaki finish 7.75" edge length, 2" tall from the heel to the spine. Heat-treated in house to ~62 HRC.

Finger-rest choil allows for increased leverage.

The handle is amboyna burl

Japanese chef knives are brittle and are designed for cutting soft tissue foods. High Carbon steel chef knives can rust if not kept dry.

This is my second Ryan Swanson Knife to date, they have landed me positions in 3 Michelin star and James Beard awarded restaurants. the evolution of his knives and designs are astounding! This latest chef knife stands up to Japanese chef knife blade thinness and resembles Murray Carter style knifes. Always get compliments on any knife by district cutlery I use and truly look forward to using them. Thank you team!
